These Mexican 3 Bean Stuffed Personal Peppers are now our go-to and a guarantee for tasty, healthy appetizers! They’re SO fast and easy. They are vegan and gluten-free and will please everyone at your table! Even the guests hovering around the oven… we don’t judge (because we do it too!).

Ingredients

  • 1 x Bag of small sweet peppers (approx. 16-18 peppers)
  • 1 x Box of VG Gourmet Mexican 3-bean burgers (total of 4 patties)
  • 3 x Tbsp of Vegan Cheese shreds of your choice

Directions

  1. Roast in the oven or toaster oven for 5 minutes at 350 F (180C)
  2. Top with vegan cheese.
  3. Place the peppers on a baking sheet with parchment paper and stuff the peppers with the broken up burgers.
  4. Wash peppers, cut a window on the top of the pepper. (Make sure not to slice in half! They will fall apart.)
  5. Defrost the burgers and break apart with your hands.
