Maple Zaatar Roasted Carrot Buddha Bowl

Zaatar is a Middle Eastern spice blend made from thyme, sumac and sesame seeds. This spice makes this bowl ever so special! Make one dressing here and use it to top up all elements of the bowl!

Ingredients

  • 1 x For the dressing: 2 Tbsp. Maple Syrup 1 Tbsp. Zaatar 1/4 Cup Olive Oil 1 Tbsp. Balsamic Vinegar.
  • 2 x Medium Carrots, chopped
  • 0.5 x Cup Bulghur
  • 1 x Package VG Gourmet Beetballs

Directions

  1. Mix all dressing ingredients together.
  2. To bake your carrots: roughly chop 2 carrots and toss with a couple of spoons of the dressing. Place on a baking sheet lined with parchment paper and bake at 425 for 20 minutes.
  3. For the bulgur: Rinse 1/2 cup of bulgur and place in a bowl. Cover with warm water and allow to soak for 30 minutes until soft. Drizzle with a couple of tsp of the dressing and mix.
  4. Finally, prepare your VG Gourmet Beetballs. Place frozen beetballs in a frying pan with a drizzle of oil. Cook for 5 minutes.
  5. To assemble: Roughly chop 2 cups of kale and toss with remaining dressing. Top with bulgur, carrots and VG Gourmet Beetballs!
