A beautiful bowl full of delicious plant based protein to keep you going!

Ingredients

  • 1 x For the bowl: • 2 cups cooked brown rice • 2 tbsp avocado oil • 2 VG Gourmet Lentil & Walnut Burgers • 2 cups kale • 2-3 cups oyster mushrooms • 1 cup watercress (or mache) • 2 stalks green onions, chopped • Fresh herbs, micro greens & edible flowers for garnish (optional)
  • 1 x Peanut sauce: • 2/3 cup smooth peanut butter • 1/2 cup water • 2 tbsp maple syrup or agave • 2-3 tbsp tamari • 1 tbsp rice vinegar • 1/4 in piece of fresh ginger, minced • 2-3 small cloves garlic, minced • 1 tbsp fresh lime juice • 1/4 tsp chili powder (optional)

Directions

  1. Cook the brown rice according to the manufacturer’s instructions
  2. In a medium skillet, heat 1 tbsp of the avocado oil over medium heat.
  3. Cook the patties for about 4-5 minutes on each side, or until golden brown. Cut into quarters.
  4. 5. Heat the remaining oil and cook the oyster mushrooms until they soften and turn golden brown.
  5. For the peanut sauce : combine all ingredients in a high speed blender and process until smooth.
  6. Place everything in a bowl and pour the peanut sauce over the patties.
