Mouth Watering Greek Restaurant platter made by Angele at Vegan Montreal!

Ingredients

  • 1 x Bag VG Gourmet Greek Gyro Tofu
  • 1 x GREEK RESTAURANT RICE 1 diced onion, 2 diced carrots, 2 diced celery ribs, 1 tsp. olive oil, 1 1/2 cup rice, 3 cups vegetable broth and 1 bay leaf.
  • 1 x Cup Vegan Tzaziki of your choice
  • 1 x GREEK SALAD 1 tomato, 1 cucumber (seeds removed), 1 yellow bell pepper, 1 very thinly sliced red onion, 1 handful black olives, vegan feta, 2 sprigs fresh oregano and lemon juice.

Directions

  1. For the TOFU SKEWERS Defrost 1 bag VG Gourmet Greek Gyro tofu and sauté over medium heat for 5 minutes. Place cubes on skewers. You can also first place the cubes on skewers and place on an indoor or outdoor grill.
  2. GREEK RESTAURANT RICE Sautée 1 diced onion, 2 diced carrots and 2 diced celery in olive oil until they are soft. Add 1 1/2 cup rice and stir until the rice is coated in oil. Add 3 cups of vegetable broth and 1 bay leaf. Bring to a boil then reduce and let simmer until the rice is cooked. Taste then add salt and pepper to taste. Add chopped parsley, a squeeze of lemon juice and enjoy!
  3. GREEK SALAD Combine all ingredients.
