Ohhh… sweet sweet Buffalo sauce. The classic crowd-pleaser. 🙌 We’ve put our own spin on it with our ✨NEW✨ VG Gourmet Buffalo Bites — perfectly crispy and grilled inside a quesadilla with vegan cheese and spinach, and then cut into personal-sized pieces. We’ve served it up with an easy homemade ranch dip. Super simple, yet so tasty! ✔️

Ingredients

  • 1 x Box VG Gourmet Buffalo Bites
  • 4 x Quesadilla wraps
  • 12 x Slices Vegan Cheese (we used Violife mature cheddar style slices and cheddar style shredded cheese)
  • 0.5 x Cup spinach
  • 4 x Tbsp Vegan Mayo
  • 1 x Tsp fresh dill
  • 1 x Clove fresh garlic, minced
  • 1 x Tsp fresh parsley
  • 1 x Tsp lemon juice
  • 0.5 x Tsp onion powder (optional)
  • 1 x Salt and pepper, to taste

Directions

  1. Cook the Buffalo bites according to the instructions on the back of the box.
  2. Place cheese slices and shreds on the tortilla, top one half with the spinach and buffalo bites.
  3. Fold the quesadilla in half and place in a panini grill for 3-4 minutes, or in a pan for 2-3 minutes per side (with a bit of oil) until browned.

  5. Meanwhile make the Ranch dip: chop garlic, dill and parsley and mix into a bowl with vegan mayo, lemon juice and some onion powder. Salt and pepper to taste.
