Lentil Walnut Burger with Pesto & Caramelized Onions!

If you are looking for a really gourmet burger...look no further! The rich taste from the VG Gourmet Lentil Walnut burger pairs beautifully with the pesto sauce, all topped with some slightly sweet caramelized onions and roasted red peppers!

Ingredients

  • 1 x VG Lentil Walnut Burger
  • 1 x Tbsp. Caramelized onions (In a large skillet, over medium low heat, melt 1 tsp. coconut oil. Add 1 large sliced red onion and let cook uncovered for about 20 minutes, stirring occasionally until the onions become slightly brown. Sprinkle with ½ tsp. sugar and a pinch of salt and pepper. Cook for 2 minutes more. Add 1 tsp. Balsamic Vinegar, and mix well. Cook for 1 more minute and remove from stove.)
  • 1 x Tbsp. Roasted Peppers -Store bought in a jar or make your own! (To make your own: preheat the oven to broil. Cut 1 red pepper in Half and remove the seeds and stem, brush with Olive Oil. Place on a baking sheet cut side down and place the baking sheet directly under the broiler for about 5 minutes. The skin should be charred and black. Remove from oven and place in a large bowl covered with plastic wrap for about 5 minutes. Working quickly with your hands, remove and discard the charred skin from the peppers, it should peel off easily.)
  • 1 x 1 Tbsp. Pesto - Store bought in a jar or make your own! (To make your own: combine 2 cups fresh basil, ½ cup toasted pine nuts, a pinch salt and pepper to taste, 2 Tsp. Olive Oil and 2 Garlic Cloves in a food processor and mix well until it becomes a paste.)
  • 1 x Tbsp. Vegan Mayo
  • 1 x Bun

Directions

  1. Toast or grill the bun.
  2. Place 1 Tbsp. of the pesto with 1 Tbsp. of the vegan mayo and spread on the bottom bun. Add the burger, thinly slice the roasted peppers and add a few slices on top of the burger as well as a large scoop of caramelized onions.
