David’s Mexican Open Faced Taco Sandwich

This is a great creation by our Chef's brother, David Bekhor!

Ingredients

  • 2 x VG Gourmet Mexican 3 Bean Artisan Vegan Burger
  • 2 x Corn Tortilla, slightly toasted
  • 1 x Avocado, sliced
  • 1 x Cup Homemade Pico de Gallo (1 diced tomato, ½ diced red onion, 1 minced Jalapeno Pepper, 2 Tsp. fresh cilantro, juice of 1 lime, pinch of salt)

Directions

  1. To make the Pico de Gallo, toss together all the ingredients.
  2. Heat the VG Gourmet Mexican 3 Bean Burgers as directed.
  3. To assemble, place some of the avocado slices on each of the corn tortillas. Top each tortilla with a VG Gourmet Mexican Burger and add 2 Tbsp. of the pico de gallo. Enjoy!
